In honor of Valentines day

When we went out with our friends we were supposed to bring a picture of us dating...I forgot to bring it...so in honor of Valentines Day here is a picture of Ryan and I 12 years ago when we were dating.  Ryan is in his Applebees uniform and I am in my dental assisting scrubs.  Ryan saw this picture and said "Look at those 2 stupid kids"  Haha Love you too sweetie!

Anasazi

We went out for to a "Pre-Valentines" dinner with a group of friends to Anasazi steakhouse.  It was so yummy.  We had a great time.  You get to cook your steak on a stone at your table.  It was a lot of fun.  Because of all the smoke Tilly's car seat still smells like steak!

3 months old

Time is going by so quickly.  I can't believe how big she is getting already.  The kids love it when she smiles at them and they think all the noises she makes are hilarious.  She is starting to settle into a routine and she is very spoiled.  She insists are being held just so, or walked around.  And who could say no to that face???

Thatcher lost his first tooth

It took him a year longer than his twin sister but Thatcher finally lost his first tooth.  In true Thatcher style he pulled it out on his own!

Snickerdoodles

Time: 1 hour
Yield: 48 cookies
Recipe from Jamie Cooks It Up!

Cookie Dough:
1 C butter, softened
1 1/2 C sugar
2 eggs
3 C flour
2 t cream of tartar
1 t baking soda
2 t baking powder
1/8 t salt

Cinnamon Sugar Coating:
3 T sugar
1 1/2 t cinnamon

1. Cream the butter and sugar until light and fluffy, about 3 minutes.  Add the eggs and cream for about 2 minutes more. This is a really important step. Creaming the dough at this point will give you soft chewy cookies later on in the game.
2. In a separate bowl combine the flour, cream of tartar, baking soda, baking powder, and salt. Add it to your creamed mixture. Mix until all ingredients are combined.
3. In a small bowl mix together the cinnamon sugar coating. Roll the dough into balls and roll it around in the coating.
4. Place the cookies on a cookie sheet sprayed with cooking spray. Don't set them too close to each other. You want them to have room to spread out and not have to touch each other while they bake.
5. Bake at 375 for 8 minutes. You only want to bake them until the outsides crack. Then take them out and let them finish cooking on the hot cookie sheet. Enjoy!

An Easy Yummy dinner

Skillet Ground Beef Stew
  • 1 lb lean (at least 80%) ground beef
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons all-purpose flour
  • 1 package (8 oz) sliced fresh mushrooms (about 3 cups)
  • 1 1/2 cups  beef-flavored broth
  • 1/3 cup heavy whipping cream
  • 4 teaspoons Dijon mustard
  • 1 lb unpeeled Yukon Gold or red potatoes, cut into 1/2-inch cubes (3 medium) I used Yukon Gold
  • 2 medium carrots, thinly sliced (1 cup)
  • 2 tablespoons chopped fresh parsley
  1. In 12-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in salt, pepper and flour. Add mushrooms; cook 3 minutes, stirring occasionally.
  2. In small bowl, mix broth, whipping cream and mustard with wire whisk. Add to beef mixture. Stir in potatoes and carrots.
  3. Reduce heat to medium-low. Cover; cook 15 minutes until vegetables are tender and sauce is slightly thickened. If the sauce is too thin at the end of the cooking process, increase the heat to medium-high and cook uncovered another few minutes until the liquid reduces and is slightly thickened.  Sprinkle with parsley. Serves 4-5

Sweet baby

She is just such a sweet happy baby. She is starting to laugh if she is tickled and freely gives smiles.  She is sleeping thru the night and is still a good eater.
