Creamy Chicken Noodle Soup

Creamy Chicken Noodle Soup
3 Chicken bouillon cubes
3 cups chicken broth
2 Cups chopped carrots
2 cups chopped celery
1 onion peeled and diced
3 cloves of garlic, minced
2 chicken breasts cooked and diced
2 1/2 uncooked homestyle egg noodles 0r about 4 cups cooked
1 can cream of chicken soup
1 cup heavy cream
salt and pepper to taste
1-2 tsps italian seasoning
a little roux for thickening if needed ( mix together flour and butter and incorporate slowly into your hot soup)

Boil water for noodles. Cook noodles until tender. Meanwhile....
Cook chicken, onions, carrots, celery, and garlic until chicken is done and veggies are tender. Add broth. Add cream and cream of chicken soup. Thicken with roux if desired. Add cooked noodles. Season with salt and pepper and Italian seasonings. Let simmer until warm and ready to eat.
I served this with some home-made bread and my family was in heaven!

LEXI'S BAPTISM


Lexi turned 8 on Oct. 22nd and my youngest brother was having his mission farewell on Oct 25th, so we decided to have her baptized in my parents ward the same weekend. It was really cool to combine the 2 events . The baptism was sweet and beautiful...just like her! As soon as she came out of the water Thatcher let out a huge "Whoa"! And it was very fitting because seeing her baptized by her Dad really was amazing! The branch president of my parents branch spoke at her baptism and Thatcher heard someone call him "President" and so Thatcher asked him if he was the prophet! It was hillarious. Afterwards my Mom had prepared a huge homemade Thanksgiving- sized feast! She was confirmed the next day in sacrament meeting at my brothers farewell. We missed having anyone from Ryans family there but it was an awesome weekend anyway. We are so proud of the good girl you are Lexi and the world is a better place because you're in it!

CafeRio Salad


This salad is so good I might be so bold as to say it is better than the real thing!
Pork:
Boneless pork roast
1 T cumin
1 C brown sugar
can of Coke
1 jar of salsa
1 tsp paprika
Place roast in crock-pot and add 2 cups water. Cook roast in crock pot on low for 5-8 hours on medium heat. Drain the water and greast from crock pot. Trim any excess fat off of the pork. Cook until pork falls apart and you can shred it with a fork

Rice:
6 cups water
4 t. chicken bouillon
4 t. minced garlic
1/2 bunch chopped cilantro
1 t. cumin
1 can green chilies
1 t. salt
1 T butter
1/2 medium onion, chopped
3 cups rice uncooked long grain
Bring water to boil, add all ingredients. Cook for 30 minutes
( this made a ton of rice so you might want to 1/2 the recipe

Creamy Tomatillo dressing:
3 fresh tomatillos, cut into quarters
1 package Buttermilk ranch dressing mix
1/2 cup mayo
1/2 cup sour cream
1/2 cup buttermilk
1 cup fresh cilantro
3 cloves garlic crushed
1/8 tsp cayenne pepper
2 T lime juice

Layer salad according to your liking:
place a warm tortilla in bottom of bowl and put shredded cheese on it
black beans
tomatoes
Romaine lettuce
crushed tortilla chips
lime wedges

Yummy!!!

We have this frog right below our porch and Ryan found this bat hanging on it!!!! EWWWW

Watching the sunrise!

At about 6:30 this morning I heard the front door open so I got up to see who went outside and I found Thatcher lying on the grass. I asked him what he was doing and he said "watching the sunrise". He is such a morning person you gotta love it!

I always love new books to read....I just read this book and it is really good! Ryan liked it too. It is the first in a trilogy, the second one just came out and I can't wait to read it!
