Bountiful Baskets


Here is what I got from Bountiful Baskets. It turned out to be a really great deal! The fruits & veggies are really fresh and good quality and the 9 grain bread was awesome! Luckily my kids love fruits/veggies because there is a ton! It looks like we will be eating some healthy/yummy meals this week!

My mom came to visit for the week and we had a great time! Luckily it was Parent teacher conference week so the kids were able to spend plenty of time with her!

Another yummy recipe!

Rumbi's chicken Salad
1 Romaine lettuce
1/2 feta cheese
diced tomatoes
1 mango diced ( I just used mandarin oranges)
2 chicken breasts cooked seasoned with lemon pepper
1 T. sesame seeds
1 bag tortilla chips
2 cups cooked rice

Dressing:

1/4 cup dijon mustard
2 T. lime juice
1 t. chili powder
3/4 cup mayo
1/2 cup white vinegar
1/4 cup soy sauce
1/2 cup white sugar
1 T. minced garlic
1T. ginger powder

Blend dressing well. Layer salad with above ingredients and serve with dressing. Top salads with tortilla chips and serve immediately

Feta Burgers! Yummm


Stuffed Feta Burgers
2 lbs. lean ground beef (ground turkey would also work great)
Montreal Steak Seasoning (good amount!)
2-3 T. Worcestershire sauce
1 t. garlic powder
2 t. dried parsley
1 egg
1/4 c. breadcrumbs
Feta cheese (I got mine at Costco)
1 package hamburger buns (I didn't have buns so I used bagels and they were really yummy) Brush each side with a little olive oil or butter and cook for 30 seconds to a minute until golden brown.

Mix all together (minus the feta) and form half of the mixture into 7 patties. Put a large chunk of feta cheese on top of each half of the patties. Put the remaining beef mixture flattened on top of each patty, covering the feta cheese. Grill/cook burgers until cooked through.

Serve burgers on a bun with lettuce, tomatoes, and cucumber sauce (below):

Cucumber Sauce (this is what makes these burgers)
1/4-1/3 c. mayonnaise (not low fat, you don't want a sweet flavor--sorry!)
1/4 c. sour cream
2 t. dried dill weed
1/2 t. garlic salt
Dash of lemon juice
1 small cucumber, peeled and shredded
Ground pepper
1/2 t. parsley
Salt to taste (it should be salty and tangy with the lemon juice)

Mix together and chill until ready to serve with burgers.

New cabinets



Ok, I have been really boring lately so I finally decided I needed to post about something... So I am going to post about my new medicine cabinets. We needed something to give us some organization. We found these at Lowes they are normally $250 each but they were on sale for $40! They were the perfect color/size and they look so nice! It was just meant to be! I know it's probably a weird thing to be excited about...but it's the little things in life, right?
